FESTIVE CRANBERRY ORANGE BREAD:

This is a family recipe going way back, great served warm on Christmas morning!

Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 1/2 teaspoons salt
  • 1 cup halved or roughly chopped cranberries
  • 3 Tbsp. grated orange zest
  • 1 egg (optional) or 2 Tbsp. ground flax seeds
  • 1/2 cup orange juice
  • 1/2 to 1 cup soy milk
  • 1/4 cup warm water
  • 3 Tbsp. sunflower or other light oil
  • 1/2 cup coarsely chopped pecans or walnuts

Preparation:

This recipe works well in larger quantities (I often do a 4 or 6 times recipe for Christmas gifts). Stir together first seven dry ingredients in a large bowl, (sifting flour, baking powder and soda so there are no lumps). In a separate bowl, beat egg (if using) and mix in the other four wet ingredients listed. Make a well in the centre of the dry ingredients and add liquid, folding together and being sure to mix well (get right to the bottom. :o) When the mixture 'comes together' adjust moisture level by adding more soy milk if batter is too dry, and fold in nuts during the last few turns. Try not to mix too much or the bread will turn out tough.

Preheat oven to 350°F. Lightly grease a large loaf tin and pour batter in. Bake until deep golden brown and when an inserted toothpick comes out clean, about 50-60 minutes.
