DANDY BURGERS:

Thanks to Jeffrey Newman for this recipe which he said comes from the Garden Gate. I was pleasantly surprised to fry them up and find them delicious. It's another recipe to use when dandelions are fresh and in season.

Ingredients:

  • 1 cup packed dandelion flowers (no greens)
  • 1/2 cup flour
  • 1/4 cup milk (dairy or soy/rice milk)
  • 1/4 cup chopped onions
  • 1/4 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/4 tsp. each basil and oregano
  • 1/8 tsp pepper

Finely chop the dandelion flowers. Pre-sauté onions in pan until just soft. Mix all ingredients together to form stiff batter. Roll in to golf ball sized pieces and flatten to 1/2". Pan fry in oil, turning until crisp on both sides. Use as you would vegetarian burgers.
