SAVOURY ONION PIE:

The warm flavour of carmelized onions makes this a dish worthy of company. It's great served with baked potatoes and a hearty salad for a complete meal.I always double or triple the recipe because it also freezes well unbaked (great for planning ahead) and is your family will want more for leftovers!

Ingredients:

  • Pie crust for one pie
  • 4 small (or 2 large) onions
  • olive oil
  • 1 pkg. Medium firm tofu (390g)
  • 1 cup soya milk or rice milk
  • 2 Tbsp whole wheat flour
  • 1/4 tsp nutmeg
  • 1/4 tsp white pepper (or black)
  • 1 tsp salt
  • grated cheese or soycheese (optional)
  • 1/4 c chopped parsley
  • vegetarian bacon bits (optional)

Sauté first three ingredients for 20 minutes on low-medium heat, until golden and transparent. In food processor or blender, blend the next six ingredients until smooth. Prepare pie crust from your favourite recipe. Spread sautéed onions/garlic evenly into the bottom of the pie crust and then pour over the liquid ingredients. Sprinkle cheese (optional), chopped parsley and veggie bacon bits onto the mixture, and stir gently to mix (without damaging crust dough). Bake in 350 degree oven for 45 minutes or until done. Let set for 10 minutes before serving. (Pie will set solidly, the longer it sits). Serves 4.
