JANICE'S VEGETARIAN PATÉ:

Thanks to Janice Keliher for this great recipe, which is awesome on lunch sandwiches, or an hors d'ouvres platter:

Ingredients:

  • 1 c. nuts (sunflower, almond)
  • 1 onion, diced
  • 2 cloves garlic
  • 1/2 c raw potato or squash (grated)
  • 2 Tbsp olive oil
  • 2 Tbsp tamari
  • 2 Tbsp balsamic vinegar
  • 1 tsp rosemary (or coriander/cumin)

Sauté onions and garlic. In food processor, blend nuts and other veggies/spices/ingred. Bake in oiled 8” x 8 ” pan (if quadruple recipe). Bake 55 min @ 350 degrees.
