SOBA SALAD:

For anyone reducing wheat in their diet, soba (noodles made from buckwheat) are a great alternative, and feature well in Japanese recipes. This is a cold marinated salad great for hot summer nights!

Ingredients:

  • soba noodles (amount about the thickness of your wrist)
  • 2 Tbsp. sweet red chili sauce
  • 2 Tbsp. organic peanut butter
  • 3/4 cup rice vinegar
  • 3 Tbsp. soy sauce
  • 1/2 tsp. organic cane sugar
  • 4 carrots, grated
  • 2 stalks celery
  • 1 cup steamed corn
  • 1 cup shredded cabbage

Cook soba noodles in large pot of boiling water until just tender. Drain and rinse in cold water (for cold salad; or leave hot if you want a hot meal). Prepare the next 5 ingredients for the dressing, whisking together in the bottom of a large bowl. When well blended, add in the prepared vegetables and the rinsed noodles. Toss well to completely coat the noodles and vegetables with the dressing.
