TOFU MAYONNAISE:

Thanks to EarthSave Canada for this recipe, which came with the comment: 'This recipe is great, but in its own way. Don't expect it to replicate Mayonnaise exactly'...

Ingredients:

  • 1 cup soft or medium tofu
  • 1/4 cup canola, sunflower or olive oil
  • 2 tbsp. apple cider vinegar or lemon juice
  • 1 tsp. Dijon mustard
  • 1 tsp. onion powder
  • 1/2 tsp. salt
  • 1 tsp. sugar (optional)
  • White pepper to taste (optional)

Preparation:

Combine all ingredients in blender or food processor until smooth. Makes about 1 1/2 cups. Note: This mayonnaise can also be used as an egg replacement in some recipes.
