SOBA SALAD:For anyone reducing wheat in their diet, soba (noodles made from buckwheat) are a great alternative, and feature well in Japanese recipes.
This is a cold marinated salad great for hot summer nights! Ingredients:
Cook soba noodles in large pot of boiling water until just tender. Drain and rinse in cold water (for cold salad; or leave hot if you want a hot meal). Prepare the next 5 ingredients for the dressing, whisking together in the bottom of a large bowl. When well blended, add in the prepared vegetables and the rinsed noodles.
